'Our morning class proved to be delightfully convivial. Coffee was perking invitingly as we were issued aprons, towels, and printed recipe lists. In no time, we found ourselves kneading pâte brisée pie crust for strawberry tarts, inspecting a rack of lamb and breading asparagus that we cooked in a simple stewpot. The three-hour classes enable students to prepare a three-course French meal and stress simple shortcuts that make kitchen time more pleasant.'
